Matilda's Baby Shower

My bf's niece turns one month old today, and her parents invited us to her baby shower.
As I've not been baking some nice cupcakes for some time, I decided to do something for this sweet little angel who just joined the family. (By the way, she is a real sleepy little worm, just like me!!!!)

As the cakes were meant for a little ger, I wanted to use bright and colourful colours, and a design that wouldn't require very much piping and time since I can only spare less than 2 hours on baking..

When the cakes were brought over to the party, they were very well received and had none left after a short time when we displayed them out. A few aunties even tried them out and commented the cakes were pretty. So glad that everyone likes it.. though Matilda is probaby too young to notice them :P

Wedding cupcakes

This is an outdated post.. I've been on MC for the whole of last week due to high fever that went like a roller coaster.. up and down. Was suspected of dengue fever, but fortunately, it wasn't! Otherwise, it wouldnt be just a week long MC!

Anyway, before I fell sick, i had fun baking and decorating 100 cupcakes as wedding favours.

Wedding cupcakes

It's a mad rush and tedious week at work.. Rushing from projects to projects..
Had a chance to take my attention and mind off work, but baking itself is a tiring hobby (especially when u have a big order)!
I spent hours and hours in the kitchen, with the help of my lovely fiance! Without him, I'll probably spent the whole day in the kitchen.. haha.

Congrats Wilchin for her big day! Here's the cakes she ordered..
A very sweet girl who left all her designs of cakes to me totally.. i hope everything's fine (though my car broke down when i was supposed to make the delivery, and ended up 15mins late!).

A box of 6 cupcakes.. with 2 green tea (macha), 2 chocolates and 2 vanilla cupcakes in a box.

Guo Da Li cupcakes

I baked till 4am on Friday.. to work on an order for a customer who is getting married!

6 cupcakes to be in a box, and each of them to be linked to the happy occasion theme.

I like the boxes, they are so cute (each with a different sticker) to show that these are wedding cupcakes. They are made up of 3 different flavours, mainly strawberry, cookies & cream and chocolate.

I received an sms from the customer few hrs after the cake delivery.
"Hi Joanne, the cupcakes are soft and nice. Very cute! Everyone loves it. Tks!"

The sms totally made my day, and make my efforts all worth it! heehee.

Anniversary cupcakes


it's a baking weekend.. working on orders from new customers. Mad rush with cupcakes!!! (No shopping this weekend :( )

I baked cupcakes for a customer who wanted to surprise her bf with cupcakes for their anniversary.
So sweet isn't it?

So, i thought, with such a sweet gf, their relationship should be really bright and colourful, so tadaa! Here's my colourful theme with the wordings "Happy Anni, I love you".

I really love these cupcakes, they are so bright and cheerful!
Heehee.
I shall bake them for my bf someday too! :)

Boss' bday

I baked some cupcakes for my boss bday which is today, but too bad, he saw me walking in the office with a big white box before i even have the chance to hide it! haha.. but well, at least he 'acted surprised' to please us! Heehee.

Daddy gotten 2 boxes of durian purees from somewhere ( i duno where!) and I find it such a waste to leave them to rot in the fridge, so i decided to make some durian puffs. It's been a long long time since i made any choux pastry!

I have more orders this week, somehow i feel imbalanced. I took a long long break from baking, and now i'm back baking frequently again! Hehe.

Birthday Cupcakes

I had a great time baking and decorating cupcakes today!
A new customer order 2 dozen cupcakes for her fren as birthday cake, and I wanted to use sweet pink theme to decorate them, making them as bright and cheerful as possible.
I added lotsa chocolate sprinkles, and the chocolate and Cookies & Cream cupcakes were so pretty even when they were naked! They were in even domes, and the fragrance was all over the house :)
Bring back all the joy I had when I used to bake so frequently.

Chocolate cupcakes baked by me.. I simply love the swirls.. I think they looked like those soft-served ice cream from MacDonalds. Haha..



I've been receiving many enquiries on asking if I conduct baking classes. I'm very flattered, but honestly, I don't think I have the capability to conduct any baking classes. I'm actually self-taught, and I obtain my skills via repeated trial and errors, and recipes from online/recipe books. All I can say is, practice makes perfect! :) Other than cupcakes, I don't really bake anything else cos' I practically have zero knowledge on them heehee.

Also, recently my pageviews has gone up by 4 times, and I am really curious to find out more on where my readers actually obtain information on my blog from. The 'trio cupcakes'

I baked lotsa cupcakes last weekend and i came up with my newest creation - The trio!
I had lotsa fun baking and decorating them, and i packed them in boxes of 9 (3 of each flavour) for customers. I've got good feedback on them, and i'm happy!

The trio! consist of 3 different kinds of flavours - Cookies & cream, Chocolate & Strawberry, each with a different design. The cookies & cream cupcake contains lotsa oreo cookies crumbs, and the amount of frosting is significantly reduced to suit a greater pool of audience who prefer less creamy cakes. I felt this works better for all! The chocolate cake is soft and i chose a simple design as chocolates are fragant on their own! They don't require fanciful designs to prove themselves :P And of cos, strawberries (my fave!) are perfect for for couples who are in love, with the 2 sweet loving hearts close to each other :)

I'll be coming up with X'mas cupcakes soon, either in boxes of 3 or 4, and also in larger quantities of 2 dozens or more. If you're interested, do drop me an email or sms as I will be consolidating my orders soon! Some enquiries on Christmas cupcakes already came in, and I will be finalizing my designs within these few days. I'm so excited for Christmas, and can't wait to start baking on the cupcakes.. Chocolate eclairs

Yesterday, out of desperation to finish up my excess whipped cream, i decided to bake some chocolate eclairs!

The recipe is soooo simple, and i believe anyone can make them! Okie.. i forgot to take pictures of them, but, instead of skinny yet pretty chocolate eclairs, i ended up with extremely enormous and giantic eclair.. so huge that i've never seen such eclairs in my life. hahaha.

recipe is supposed to yield 18, but i only got 6!

lol.

i didnt expect the eclairs to expand so much, and i thot, i've seen bigger eclairs around, so i might as well make that instead of those bite-sized eclairs..

anyway, for anyone thats interested.. here's the recipe (which i managed to copy down while reading at borders.. hahaha..)

Recipe for chocolate eclairs:


1 cup of plain flour (125g), sifted

1 stick of butter (125g, 4oz), unsalted

1 cup of water (250g, 8 oz)

4 large eggs, lightly beaten

whipped cream

100g dark chocolate, chopped and melted


Steps:


Add the butter and water in a heatproof bowl and heat over medium heat.

Melt the butter by constant stirring.

Switch to strong fire and boil mixture.

After butter is totally melted, add the flour to the mixture at one goal and beat with a wooden spoon till well-mixed. Mixture will be heavy and lumpy.


After mixture is well combined, transfer to a cool large bowl and let it cool for a moment. Add in the eggs (abt 3 tsp at a time) and beat well. Continue to add the eggs slowly and beat well after each addition till all eggs are added.


Prepare 2 baking trays and sprinkle some water on it. Pipe the batter (abt 1.5cm for bite size) and bake at 210C for 10-15mins, and afterwhich, lower temp to 180C and continue to bake for another 10-15mins.


Remove from oven and cool.


Split the eclairs into 2 by slicing in the middle, and add in the whipped cream.


For chocolate toppings:


Melt 100g of dark couverture chocolate (i'm lazy.. i use microwave instead of double boil method) till chocolate is smooth and consistent. Spread on top of eclairs, chill slightly or cool for chocolate to set.


Easy, isn't it? Heehee. Enjoy!

A long baking day!

I tried quite a few new recipes today.. and since there is some leftover durians sitting in my fridge, i tot, what the! Might as well utilise them!
so... here it is..
while my puffs are in the oven! (I've decided to name the puffs that buttercup baked as power-puffs! haha!)








i also baked chocolate cupcakes (again!) cos' i had some remaining batter left from the previous bake. also, i tried out strawberry yoghurt muffins.. and.. blur me, forgot to take pictures of my muffins after they are baked.. i only haf them before entering the oven!




this is a chocolate banana cake i've baked the other day.. all my backlogs. heh. it's frosted with chocolate on top, and with banana fillings with chocolate cream in between the cake layers. my first attempt at bigger cakes! (the cut out portions are eaten by my boy.. my guinea pig hehehe)


and this is yummy chocolate lava cake. as the name suggest, lava cake, means that the chocolate will flow out like lava after you bite into it! look like the chocolate oozing out (i know it's a lousy pic.. pardon me.) my boy loves this, and keeps pestering me for more!

Chocolate cupcakes again!




A fren of mine ordered a dozen chocolate cupcakes from me.. and i made 2 dozens plus a 9" cake, which I intend to frost it tomorrow to turn it into a chocolate banana cake. hehe.
