Guo Da Li cupcakes

I baked till 4am on Friday.. to work on an order for a customer who is getting married!

6 cupcakes to be in a box, and each of them to be linked to the happy occasion theme.

I like the boxes, they are so cute (each with a different sticker) to show that these are wedding cupcakes. They are made up of 3 different flavours, mainly strawberry, cookies & cream and chocolate.

I received an sms from the customer few hrs after the cake delivery.
"Hi Joanne, the cupcakes are soft and nice. Very cute! Everyone loves it. Tks!"

The sms totally made my day, and make my efforts all worth it! heehee.

The 'trio cupcakes'

I baked lotsa cupcakes last weekend and i came up with my newest creation - The trio!
I had lotsa fun baking and decorating them, and i packed them in boxes of 9 (3 of each flavour) for customers. I've got good feedback on them, and i'm happy!

The trio! consist of 3 different kinds of flavours - Cookies & cream, Chocolate & Strawberry, each with a different design. The cookies & cream cupcake contains lotsa oreo cookies crumbs, and the amount of frosting is significantly reduced to suit a greater pool of audience who prefer less creamy cakes. I felt this works better for all! The chocolate cake is soft and i chose a simple design as chocolates are fragant on their own! They don't require fanciful designs to prove themselves :P And of cos, strawberries (my fave!) are perfect for for couples who are in love, with the 2 sweet loving hearts close to each other :)

I'll be coming up with X'mas cupcakes soon, either in boxes of 3 or 4, and also in larger quantities of 2 dozens or more. If you're interested, do drop me an email or sms as I will be consolidating my orders soon! Some enquiries on Christmas cupcakes already came in, and I will be finalizing my designs within these few days. I'm so excited for Christmas, and can't wait to start baking on the cupcakes.. A customer ordered these from me for her family and friends. I hope they like the cupcakes!
I love baking strawberry cupcakes, because I am a HUGE fan of anything to do with strawberries.. guess I inherited that liking from my daddy hehe.

These strawberry cupcakes are really fragrant and the frosting is light and fluffy, made from my homemadestrawberry puree.

Sophiscated, i hope you enjoyed these cuppies! :)

Strawberry & Peach cupcakes topped with mascarpone cheese cream

I bought a punnet of blueberries, as well as a box of nectarines (peaches) from NTUC during lunch today. It got me excited for the whole afternoon, hoping that I can knock off on time so that i can rush to bake something out, hopefully for breakfast tml!



Surfed around for recipes, and finally found this that I like! Improvised a little by adding in additional strawberries (my fav! Yummy) to the batter, and all i can say is.. it's so yummy that you wanna eat the batter!

I made a total of 15 cupcakes, but before i could get them frosted, 4 were gone.. eaten by my family haha. Daddy says its nice, and soft.

And i couldnt help but keep licking on the frosting, and feeding my boy spoons after spoons. FYI, mascarpone cheese are really ex. $10.80 for a tub of 500ml. Mascarpone cheese are used to make tiramisu cakes (and if u remember my previous post, I promised to make a tiramisu for my bf! But the cheese ended up on my cuppies instead :X ). They are exceptionally fragrant and soft, and taste really light and sweet.

After frosting and all, i'm left with ONLY 8 cupcakes. Half gone within an hr. I intended to keep 4 for myself, and 4 for my bf but who knows.. my evil sister actually gave 4 of my cuppies away to her tuition kid!!! arggggggggh. there goes my breakfast :(

Nvm, i'll make them again.. since there's still peaches and strawberries in the fridge!

cakes, cakes, and more cakes!

my first attempt at baking a "big" cake, topped with my favourite strawberries and chocolate cream! =)

i'm really pleased with the final outcome. A tall and sweet strawberry cake, heehee.





Pretty not??? :P I love the cross-section, revealing the strawberries with cream.

And of course, how i can miss out my cuppies ..!

vanilla vanilla & more vanilla pls!

as the title suggest, i've been working quite hard to get my fine tuned purrrfect vanilla cupcake.

finally, i found a recipe that i'm really quite pleased with. it yields soft yet moist cakes, and the texture remains even the next day!


and after 2 failed attempts with whipped cream, a tinge of phobia with whipped cream is growing in me.. however, with the help of a podder from LesDames, I managed to apply correct techniques to the cream and making it fluffy, and firm!

Yesterday, i met up with a Uni fren for dinner.. since she came down all the way from Bukit Batok with her bf, just to have dinner with me (*touched* haha...), i decided to bake something for her to try! And here it is.. pretty colourful ar? :P
