Hi all, sorry for the super long disapperance act! Yes, buttercupcakeshop is still around, just that I had been super busy for the past 3-4 months due to my own wedding preparations (and yes, i'm a M.W since 28th March 09!) as well as my honeymoon for the past 3 weeks.

Apologies to all those who have EMAILED or SMS/CALLED me during the past 3 weeks with regards to cupcakes enquiries. As I was overseas in USA and Taiwan, I was unable to reply. Once again, sorry to all those that i've not replied!

I haven been baking for a long, long time.. but i'm proud to say that i've baked my own wedding cakes for my Guo Da Li. Though it was a tiring thing to do.. but it was very meaningful to me. I've baked wedding cakes for several couples, and finally it was my turn to bake some for my own big day! To cut it short, here's the pictures..

Hey frens! I'm back :P finally..
November is a busy month, busy with stressful-work, holiday-planning (yeah I'll be in disneyland HK within 2 weeks) and with baking!

A very lovely bride-to-be ordered some cakes from me. I didnt want to take up the orders initially due to time constraint, but she was really sincere, and was so compromising to my request of going with simple designs, and i totally didnt regret taking the order up! I actually had lotsa fun and enjoyed the bake though it was after my work on a Friday..

I've decided to show more pictures of my important tools & equipment in my kitchen, which I have to accredited for all the cakes that I bake..

To me, the most impt 'tools' I need in baking are my mixer, and my oven. I wouldn't want to bake if I do not have either of these!!

Let me introduce to you.. this is my best fren in the kitchen - KitchenAid mixer. I bought this red giant for myself as a Xmas gift last year. It has 10 beating speed, and has never failed me! If anyone is keen in getting a mixer, I'll definitely recommend this. Stylist and value for money!

My Ariston oven which I'm absolutely proud of.
I got this as a gift from my mummy last year after my previous 2 small ovens failed me and failed my cakes. Mummy saw how disappointed I was after my baking attempts failed due to inconsistent oven temperature.. and she decided to get me this oven as a gift!

Wendy, the bride-to-be sms me a few hours after her hubby collected the cakes from me, and I am soooo glad that she loves the cakes! She commented that the cakes were moist and soft, and totally heart them. That totally made my day!!!

Matilda's Baby Shower

My bf's niece turns one month old today, and her parents invited us to her baby shower.
As I've not been baking some nice cupcakes for some time, I decided to do something for this sweet little angel who just joined the family. (By the way, she is a real sleepy little worm, just like me!!!!)

As the cakes were meant for a little ger, I wanted to use bright and colourful colours, and a design that wouldn't require very much piping and time since I can only spare less than 2 hours on baking..

When the cakes were brought over to the party, they were very well received and had none left after a short time when we displayed them out. A few aunties even tried them out and commented the cakes were pretty. So glad that everyone likes it.. though Matilda is probaby too young to notice them :P

Feeling a little melancholy, listening to eagles' music as i am typing away..

A colleague of mine has left the company, and I am so glad he replied to my sms which I sent to him to check on him. He still sound very positive, and has already gotten a few job offer. Really glad that at least he's picking himself up! To be very honest, he didnt exactly left the company, but was asked to leave actually. With him not around the office, more stories began to unfold. It is really disappointing to have that there is some truth behind these stories.. A man who seemingly has a happy family and 2 young children, turned out to be unfaithful man.
I'm in no situation to judge, and thus I wouldn't comment much. But what i felt was, he is so silly to actually let his affair affect his career! Sigh.. oh well, life goes on. Hope the next replacement for his position will be someone even better and capable than him. Really have enough of nonsenses at work these days that morale is so low..

To talk about something happy, I'm going for my gown fitting this friday! (A little ironic here since I was just talking about affairs a minute ago..) Another 3 days to go heehee. These days, I kept recalling the days whereby I got to know my bf, and how he tried to get close to me and started asking me out, with me being so stupid, not realising any hints from him! Haha. We still laugh over it whenever we talked about the topic :P

Some of my friends asked me, how do you know that you're marrying the RIGHT one? Honestly, somehow, you just know it. When you meet the right one, everything just seem perfect. You just want to spend every single minute and second with him, you just want to see him before you close your eyes and sleep, and the moment you open your eyes when you're awake. No matter what difficulties or problems you have, a hug from him just seem to stop the earth from rotating and problems thrown far far away from you. You began to realise, life is not about "Me", but it is about "Us".

I am indeed a blissful, fortunate and one who is soaked in love and happiness :)

This is an outdated post.. I've been on MC for the whole of last week due to high fever that went like a roller coaster.. up and down. Was suspected of dengue fever, but fortunately, it wasn't! Otherwise, it wouldnt be just a week long MC!

It's a mad rush and tedious week at work.. Rushing from projects to projects..
Had a chance to take my attention and mind off work, but baking itself is a tiring hobby (especially when u have a big order)!
I spent hours and hours in the kitchen, with the help of my lovely fiance! Without him, I'll probably spent the whole day in the kitchen.. haha.

2 days ago, i had an urge to eat hotdog buns, so i decided to try and bake some for myself and my family since my dad is a fan of bread!

I google for an online recipe which lots of raves and decided to try it out. I found a pack of brand new cheddar cheese in the fridge and added it to the bun for cheese buns. Turned out really nice!

A little dense on the buns, so i'll continue to try and improve it! heehee.

Hello all, sorry for the disappearance acts. Been really busy (with I-duno-what?) and time really flies!

I haven been baking for more than a mth, and i guess it's excuseable? The weather is so freaking warm and humid, and turning the oven on probably will shorten my exhausted little life further..

But.. it's the berries season! How can I not bake? Blueberries are up for grabs are cheap and low prices, and i just bought a punnet. Wanting to bake, I got home excitedly after work.. but to realise, gosh, I ran out of butter!

So.. hang on there. I should be back baking once I get my butter these 2 days :P

The reports in everyday newspapers and news really upset me. Seeing pictures of children bodies found, a foot found but nowhere is the body found, half-body found with no body, and all the pictures of heartbroken families sobbing and praying for miracles to happen made me feel that I just want to do my little part for the victims.

I will be handling in the money to Redcross (at 15 Penang Lane) tomorrow afternoon.
However, I will go on with the collection, and once I collected the next sum of money, I will hand them over to Red Cross personally on the next weekend.

If anyone of you would like to make a donation, please let me know. The official receipt from Redcross can be sent to you, otherwise, I can post the pics of the receipts on my blog.

Let us do our little part for the victims. They need the money for immediate medical helps and also for the reconstruction. We can never heal what they have undergo emotionally, but we can help by providing them with food and shelter.

6 cupcakes to be in a box, and each of them to be linked to the happy occasion theme.

I like the boxes, they are so cute (each with a different sticker) to show that these are wedding cupcakes. They are made up of 3 different flavours, mainly strawberry, cookies & cream and chocolate.

I received an sms from the customer few hrs after the cake delivery.
"Hi Joanne, the cupcakes are soft and nice. Very cute! Everyone loves it. Tks!"

The sms totally made my day, and make my efforts all worth it! heehee.

Jasmin, thanks for your tag! I'm so happy to see it :) Here are the pictures of the cupcakes I've designed and baked for Jasmin and her friend "Son", and I'm so glad they liked them!

Another customer also ordered from me on the same day, and I wanted to use pink & purple for a very sweet feeling, and also included cupcakes with teddy bears sprinkled with hearts all over. Personally, i think the cupcakes looked very sweet. And I was very happy to receive an sms from her telling me that she and her frens love the cakes, and will be ordering from me again! Heehee. I guess this is part of the customer satisfaction.

I had a great time baking and decorating cupcakes today!
A new customer order 2 dozen cupcakes for her fren as birthday cake, and I wanted to use sweet pink theme to decorate them, making them as bright and cheerful as possible.
I added lotsa chocolate sprinkles, and the chocolate and Cookies & Cream cupcakes were so pretty even when they were naked! They were in even domes, and the fragrance was all over the house :)
Bring back all the joy I had when I used to bake so frequently.

I've been receiving many enquiries on asking if I conduct baking classes. I'm very flattered, but honestly, I don't think I have the capability to conduct any baking classes. I'm actually self-taught, and I obtain my skills via repeated trial and errors, and recipes from online/recipe books. All I can say is, practice makes perfect! :) Other than cupcakes, I don't really bake anything else cos' I practically have zero knowledge on them heehee.

Chinese New Year cupcakes

I know i've not been posting for the longest time.. even my sister is back from her 3 weeks honeymoon, and i still haven start baking since her wedding!
I probably had an overdosage baking for her earlier this month. haha.

my dad is bugging me to on the oven and start baking some CNY goodies like pineapples tarts or kueh bangkit. but i'm really too lazy and tired to do so!

I spent most of my time in front of the computer.. either working, or checking the latest update of the flat selection. Yes, next Wed would be my longgggg waited day to select my flat from HDB, and i've been praying so hard to get an unit my bf and I would like.
But as days passed by, i see the number of units available getting lesser and lesser, my heart sink.. haha. its true lah. the anxiety is killing me yet i cant do anything!

well well, and my selection date is the eve of CNY! if i happened to get a good unit, i'll bake some cupcakes to celebrate!

My sis had her wedding last Saturday. It was a very special day, with lotsa memories and cupcakes! Haha.. i promised to bake her cupcakes are her wedding gift from me, and i spent the whole of friday baking and decorating.. with lotsa sister-ly love from me!

The cupcakes are meant for her church reception, together with her catering.. I was standing beside the cupcakes and pretending to be just another guest, and I overheard conversations from the guest that they liked my cupcakes! :) That totally brighten up my day. Heehee.

I was feeling rather creative, and attempted this.. I don't really know what I should call these, but all i know is that they tasted really good..

The top layer is coated with chocolate and hazelnut ganache.. the combination totally taste like nutella! The only difference is that it isn't as thick as nutella, and it is even more fragrant. I added chocolate cream in between the 2 layers of cakes, and the combination is just so good.
My darling ate 6 in a go. Haha.

These are easy to make, and i'll definitely try them again!

My own sister is getting married in 2 weeks time, and I promise to bake her cupcakes, cupcakes and more cupcakes as her wedding gifts!

For her "guo da li", ie. my future bro-in-law coming to my house to ask for hand, she requires cakes to distribute to friends and relatives. So, i came up with 4-in-a-box, with 4 different flavors of cupcakes in a box for each family..

I came up with my never-failed-me-chocolate-cupcakes, my green tea matcha cupcakes, authenic vanilla cupcakes and last but not least, my proud creation, the fragrant banana cupcakes.

I love these banana cupcakes, they are made with ripe bananas and every time when i bake them, my kitchen will be overwhelmed with the fragrance.

Basically, the packaging for my xmas cupcakes will be:
1) in a box of 2 (just sweet for couples.. one for you, and one for him!) $8 (min 2 boxes)
2) in a box of 9 (great for a small group of gathering, sharing among best friends) $35
3) in a box of 12 or more (suitable for office parties, family celebrations and a treat to all that you love!) $42 for a box of 12 (discounts will be given for orders more than 100 pcs)

Free collection for the above cupcakes will be on 23rd December, location at Lavender MRT Station or a charge of $10-$15 for delivery. If you want your cupcakes on any other days, please sms/email me for further discussions.

Prices of normal cupcakes (refer to my old posts and pictures) will be $2.50/pc (min 12 pcs/flavour), but priority will be given to Xmas cupcakes at the moment, thus place your order fast if you are interested! Buttercupcakeshop cupcakes are suitable for birthdays, anniversary, baby's 1st month, Xmas and all occasions. Designs can be catered to your preference.

Hi frens! sorry for the lack in updates. I had an overdosage of baking this week due to an order for 120 cupcakes from a customer to be delivered on friday.. i baked and baked after work, all the way till 2am in the morning!

Anyway, i've received enquiries on my Xmas cupcakes, and customers requesting to take a look at the samples. So.. i got the first batch of designs out. More to come.. definitely!

The 'trio cupcakes'

I baked lotsa cupcakes last weekend and i came up with my newest creation - The trio!
I had lotsa fun baking and decorating them, and i packed them in boxes of 9 (3 of each flavour) for customers. I've got good feedback on them, and i'm happy!

The trio! consist of 3 different kinds of flavours - Cookies & cream, Chocolate & Strawberry, each with a different design. The cookies & cream cupcake contains lotsa oreo cookies crumbs, and the amount of frosting is significantly reduced to suit a greater pool of audience who prefer less creamy cakes. I felt this works better for all! The chocolate cake is soft and i chose a simple design as chocolates are fragant on their own! They don't require fanciful designs to prove themselves :P And of cos, strawberries (my fave!) are perfect for for couples who are in love, with the 2 sweet loving hearts close to each other :)

I'll be coming up with X'mas cupcakes soon, either in boxes of 3 or 4, and also in larger quantities of 2 dozens or more. If you're interested, do drop me an email or sms as I will be consolidating my orders soon! Some enquiries on Christmas cupcakes already came in, and I will be finalizing my designs within these few days. I'm so excited for Christmas, and can't wait to start baking on the cupcakes.. I have a 2kg block of cream cheese sitting in my fridge since.. weeks ago (i cant remember!) but of course, the expiry date is still months later! I have been procastinating my plans for baking a cheesecake.. and finally, i did it!

Lack of updates..

Hello! I'm still alive and kicking, though currently i'm down with a flu and sorethroat :(

Sad to say, i've been too busy with work that I didnt have time to do my baking. But actually, i did bake a blueberry bday cake for my boy's mum bday, but i was in such a rush that i forgot to take pics.. and last week, a podder bought a dozen of cookies and cream cupcakes from me, and i decorated them with chocolate ganache fresh cream (okie, again.. i was in such a rush that i've got no time to take pics!) and i'm so glad that she likes them :) Apparently the feedback was positive and she's keen on trying other flavors from me too!

This thursday is a public holiday, and I SHALL BAKE MORE CUPCAKES!

New ideas for cupcakes

Hello peeps, i'm back! Let me start by thanking all who had dropped comments/shouts on my shoutbox. Your compliments totally brighten up my days and encourage me to bake more and more! =) Keep them coming plssss...

Sorry for the lack of updates.. been busy with work, fun and shopping and spending lotsa time with my dearest and taking care of my little niece who was 'exciled' from her home since her little brother is suffering from HFM.

I took a break off baking since my overdosage of wedding favours cupcakes last week. My aim was to 'retire' temporarily for 2 weeks while allowing my poor oven to rest and take a break! However, one week has passed and my hands/mind is itching and thinking of new ideas and flavours for cuppies..

Okie ppl, i need your suggestions. How about suggesting some flavours that i've yet to attempt or designs so that my mind can get back to the track after the 1-week holiday? Perhaps, something for Halloween or my upcoming birthday (2 weeks later)? I need ideas ideas and ideas! Thus, all contributions will be greatly appreciated! Do post them in my shoutbox :) And of cos, you get to enjoy my bakes if they materialize! haha!

This weekend is a fruitful one. I baked 100 cupcakes for a good fren cum colleague of mine, as wedding favours. These are meant for distribution to her mum's colleagues.

Thanks to my greatest helper ever.. who is my boyfriend :)

He helped me with the packaging, from the boxes to cakes, to the photos, stickers, and ribbons!

What a wonderful guy i've got!

Anyway, I've decided to go for simple yet elegant cakes. After thoughts and thoughts, I decided to forgo the designs I've planned earlier on as I felt simplicity is the most suitable for the bride!

The bride chose the Green Tea/Matcha cupcakes together with Cookies & Cream to be as a dual in a box. And as these are wedding favors, i added hearts as the main decorations.

The pink hearts were made of Marzipan, which is almond paste. The cakes and frosting are of green tea flavoured and there was a tinge of green tea smell lingering in my house after baking!

These are Cookies & Cream cupcakes, topped with fresh cream and sprinkled with oreo cookies. I guarantee every single bites consist of oreo cookies!

Sorry for the blur pictures due to the rush of passing over these cakes to my fren. These are the boxes packed with 2 cupcakes each, tied with a pink ribbon and with my buttercupcakeshop sticker.

So, any comments readers? I do cupcakes for all occasions (wedding/birthday/halloween/valentines' day/any day u name it!) and designs can be catered and specified to your likings.

I had an order for 90 cupcakes yesterday, and i took a day leave to stay home (rest + bake)!

I spent my own afternoon and night for these creations..

I heard the feedbacks were really good, and immediately, other orders came in!

As these cuppies were meant for little children, i tried to make them as colourful and bright as possible.. and of cos, not forgetting as adorable as possible! Little flowery cuppies for little gers while chocolate cupcakes for the boys!

It's 10.38pm, and my bf isn't with me. I'm feeling weird, cos he will be by my side everyday during this time. We're known to be the 'superglue' to our families.. and now, while waiting for him, i shall blog about my bakes today!

No prize for guessing what I baked today. haha. (Btw, no one claimed my prize the other time.. so, forget it!)

A colleague cum good fren of mine is having her wedding nx month, and she requested me to bake 100 cupcakes for her to distribute to friends n relatives. This request got me working.. thinking.. and planning. I've got to start preparing my packaging boxes (still searching), decide on my design/deco, recipes and more.

She wants a sample of my cookies and cream (i promoted to her! haha) and so, I've baked a total of 2 dozens to distribute around.. to her, to my sister, and to satisfy my darling's craving for cupcakes hahaha (i'm surprised he never get sick of them!).

I had a great time baking and decorating them!

I had been thinking of baking cookies & cream cupcakes since last week.. thinking of the crushed oreo cookies in every bite of my cupcake.. wow.. Isn't that heavenly?

This is my first time trying out on this recipe, and it works greatly! A pity I baked only 1 dozen cupcakes, and we ate 3 freshly baked out of the oven! That left us with only 9 ... So, i frosted and topped with oreo frosted cream, and it just further add on to the heavenly flavor..

The naked cupcakes before they are frosted.. the white portions are the oreo cream, and after baking, they turned out to be crispy! Yummy.

Ratatouille

Look what I've found! This is so interesting.. i actually found the recipe to Ratatouille!

Those who have watched the movies will know that Ratatouille is actually a chap-ba-lang, meaning that it consisted of 'a little of everything/anything' and whipped into a dish. Apparently, it doesnt have any much relation with Rats (i hope, other than the movie).

Here's the recipe (adopted from Cookingforengineers, Micheal Chu):

To begin, assemble the ingredients: 6 garlic cloves, 5 medium button or brown mushrooms (I prefer brown for more flavor), 1 medium zucchini, 5 sprigs of Italian parsley, 4 sprigs of basil, 1 medium onion, 1 can diced tomatoes (or 2 tomatoes peeled, seeded, and diced), chicken or vegetable stock (we'll need 3/4 cup or 180mL), 1 Tbs. tomato paste, 1 medium green bell pepper, and 1 large eggplant (about 1 pound or 450 g). Drain the canned tomatoes.

Wash and scrub all the vegetables. Remove the parsley and basil leaves from their stems. Dice the green bell pepper, eggplant, and onion. Quarter the zucchini lengthwise then slice into 1/4-in. (1/2 cm) segments. Quarter the mushrooms. Chop the parsley and the basil.

Start cooking by heating olive oil in a large pot over medium heat. Add the minced garlic and saute until the garlic smell intensifies, about one minute.

Add the diced onion and continue to saute until they turn translucent, about 4 more minutes.
Once the onions are translucent, add 1 Tbs. tomato paste. The tomato paste will be in a clump and will take a bit of stirring and pressing to get it to spread out and cover the onions and garlic.

As you work at spreading the paste out and mixing it with the onions and garlic, the paste will cook and darken in color. Once some of the paste starts to still to the pan and brown, it's time to add the stock (about one minute).

Pour in 3/4 cup chicken or vegetable stock and stir until the broth begins to simmer. Using your spatula or utensil, scrub the bottom of the pan to release any browned bits of garlic, onion, or tomato paste.

Add the diced eggplant, zucchini, bell peppers, and mushrooms. Stir to combine thoroughly and cook for 10 to 12 minutes, stirring every couple minutes to promote even heating.
The eggplant will release a lot of liquid (slowly) into the pot and it's in this liquid that you'll want to simmer the other ingredients in. To evenly cook all the ingredients, you'll have to stir it to make sure the vegetables spend time touching eggplant liquid. As a bonus, the flavors mix amazingly well during this process.

The eggplant will mostly be falling apart at this point, but the zucchini, bell peppers, and mushrooms should be tender but not yet mushy.

Add the diced tomatoes and stir in. After about a minute, the tomatoes will have heated through. Turn the heat down to the lowest setting.

Stir in the chopped parsley and basil. Add salt and pepper to taste.

Havent baked cupcakes for some time already! Time for cuppies! My new recipe book "Crazy for Cupcakes" which my sweetest bf bought for me from Kinokuniya yesterday, has soooo many tempting recipes that I really cant wait to try out.

Muffins

i had cravings for Muffins since last week. Wanted to bake some last weekend to curb my cravings, but i ran out of flour! :(

finally, i bought my flour and a can of peach.. and tadaa!!!

See the slices of peaches and bananas? yummy,

there were more than enough for me to curb my cravings, and the banana ones are really fragrant! Even the peach muffins smell of bananas.

On a side note, i've baked pizza again last weekend for my darling.. i love watching him enjoying the pizzas after a tiring day at work :P (I apologise for the lousy picture due to my very-outdated-and-should-be-in-museum-handphone).

I also cooked spaghetti carbonara for the first time using Martha Steward's recipe. They taste really good! My darling finished every single strand of them and the mushroom soup, and ended up with a bloated stomach! hahaha

Recipe adopted from MarthaStewart.com

Ingredients
(Serves 6)

1 tablespoon extra-virgin olive oil
10 ounces pancetta, cut into 1/2-inch dice
1 pound spaghetti
1 cup heavy cream, plus more if needed
4 large egg yolks
2 cups grated (about 5 ounces) Parmesan cheese, plus more for garnish
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Directions

Bring a large saucepan of water to a boil. Heat a medium skillet over medium heat. Add the olive oil and pancetta to skillet, and cook until the pancetta is browned, 3 to 4 minutes. Remove skillet from heat, and keep warm.

Cook spaghetti in boiling water until al dente, about 8 minutes. While spaghetti is cooking, whisk cream, egg yolks, Parmesan, salt, and pepper in a medium bowl until combined. Drain pasta, and return to saucepan. Immediately stir in egg-and-cheese mixture until well combined. Add warm pancetta and fat from pan. Toss well. Thin sauce with additional cream, if necessary.

Serve immediately, garnished with grated Parmesan cheese.

My colleague is now happily enjoying himself in Japan! While another newcomer tendered on Monday.. i had to cover up for their work, and it's so coincidental that a major tender came in this week :( to make things worse, the deadline is next Wed! Boohoo.

Such a tender should take 3 weeks to be completed, but i'm only left with 3 days! Today, tomorrow and day after (i'm on leave on friday, yippie!). Will have to skip the pricing meeting on Friday then, and hopefully no need to come back on the weekends for work..

Saturday was great, i had lotsa fun. Went to the zoo in the morning with my family to celebrate my beloved little niece's 4th bday, and rushed home to frost my cupcakes for my fren's bday.
The strawberry cupcakes turned out to be good! Everyone commented that they were nice. But.. i forgot to take pictures lar.. haha. Shall wait for the bday boy to send me pictures of the cupcakes taken in the dark dark St James then.

No baking for this week.. i'll had been working OT yesterday, today.. and definitely tomorrow.. my darling is meeting his frens for dinner on friday, hopefully i'll have the time to bake!

The fickle minded

A very good fren of mine (frens for a decade!) bday is coming soon.. and we’re actually celebrating for him at St James tomorrow night.

It’s been a long long time since I’ve last clubbed. Last year, I was drinking so much that I made my new year resolution to be “Quit Drinking”.
I indeed achieved that!! When I was back in Perth, I’ve been drinking day and night.. begging for my frens to let me have my apple juices instead. Haha.
So once back in Singapore, I made alcohol my enemy and shoo them far far far away.. haha.

Well, back to the story.. I’ve promised to bake him a birthday cake way long ago. I do remember my promise to him!! And so.. I’ve been cracking my head the whole of today, thinking of what I should bake..

Initially, I decided on a big fruit cake as his bday cake. Then I thought, since he loves chocolate, why not bake him my favourite chocolate cupcakes (which apparently was my proudest-bake till date LOL)? And shortly after, I changed my mind again. I still have lots of strawberry purees from my last bake, and why not utilize them? Should I bake strawberry cupcakes, or a big fruit cake?

after an hour of battling with my thoughts, i have still yet to decide on what to bake.. and while thinking, I thought of something again! How about cheesecake cupcakes?

Now.. i'm seriously having a headache deciding on what i should bake.

Strawberry & Green tea (macha) cupcakes

saw some raves about a perfect vanilla based cupcakes previously in cupcakestakethecake forum, and thot i should try them out!

i improvised the recipe to make them into 2 batches, 1 batch of strawberry cupcakes, and another batch of green tea cupcakes.

my bf bought me a punnet of my favourite strawberries, and they are so fragrant and pretty! i'm even thinking of eating them while in the office.. haha..

i made my own puree with these fresh strawberries & a little imagination, and it turned out that these strawberry cupcakes received really good comments! everyone commented they tasted light and fragrant! personally, i really like them.. (okay, i love everything to do with strawberries!!!) and definitely will bake them again!

as for the green tea, my previous attempt at green tea cupcakes didnt turn out too good. so, i decided to come out wif my own recipe. my sweetest boyfriend bought me a packet of japanese green tea powder and the green tea powder is really good. better den the previous one i've tried.

someone tagged me to request for the tiramisu cupcakes recipe.. and i shall share this recipe.

note: I will share some of the recipes, but not all.. cos' since i'm in the preparation of finalizing my recipes for my future buttercupcakeshop :P, i need to keep the recipes that i've confirmed confidential.. but whenever possible, i'll share with my fellow bakers!

Tiramisu Cupcakes

Cupcake:
6 eggs, separated (separate when cold; allow to come to room temp)
3/4 teaspoon cream of tartar
1 cup sugar, divided
3 tablespoon water, room temp
1 teaspoon vanilla
1/8 teaspoon salt
1 cup sifted, all-purpose flour (measure after sifted)

In large mixing bowl at high speed, beat egg whites with cream of tartar until foamy.
Add half of the sugar, 2 tablespoons at a time, beating constantly until sugar is dissolved and whites are glossy and stand in soft peaks.
Rub just a bit of meringue between thumb and forefinger to feel if sugar has dissolved.
In small mixing bowl at high speed, beat egg yolks until thick and lemon-colored, about 3 to 5 minutes.
Gradually beat in remaining sugar, water, vanilla and salt (if desired) until blended.
With a sifter or sprinkle flour with a sieve over whites.
Add beaten yolk mixture.
Gently, but thoroughly, fold yolk mixture and flour into whites.
Fill muffin cups 2/3 full. Bake in a preheated oven at 350 degrees for 10-15 min or until done.

Espresso Syrup
½ cup confectioner’s sugar
2/3 cup water
5 teaspoons espresso powder

In a small, heavy saucepan over high heat, combine the water, the remaining 1/2 cup confectioner’s sugar and the espresso or coffee powder.
Bring to a boil, stirring occasionally.
Remove from heat and let cool.
Use a fork to poke a few holes into cupcakes so that they will absorb liquid.
Pour approximately ½-1 teaspoon of syrup onto each cupcake.

Frosting

3 c mascarpone
1 c confectioner’s sugar
¼ c marsala wine
¾ c heavy cream, chilled

In a medium bowl using an electric mixer set on medium speed, beat together the mascarpone cheese, confectioner’s sugar and marsala until well blended.
Add the cream and beat until fluffy, about 1 minute.
Frost cupcakes with mascarpone/whipped cream mixture.
Dust tops with cocoa powder and then sprinkle with dark chocolate shavings.

This recipe was adapted from the recipes “Classic Sponge Cake” and “Espresso Tiramisu”, both found on www.baking911.com.

Note: I do not have masala wine, so i substituted with the all-time favourites: Baileys!
I substituted heavy cream for whipping cream.
I used instant 3 packets 3-in-1 coffee powder for the espresso powder.

Chocolate eclairs

Yesterday, out of desperation to finish up my excess whipped cream, i decided to bake some chocolate eclairs!

The recipe is soooo simple, and i believe anyone can make them! Okie.. i forgot to take pictures of them, but, instead of skinny yet pretty chocolate eclairs, i ended up with extremely enormous and giantic eclair.. so huge that i've never seen such eclairs in my life. hahaha.

recipe is supposed to yield 18, but i only got 6!

lol.

i didnt expect the eclairs to expand so much, and i thot, i've seen bigger eclairs around, so i might as well make that instead of those bite-sized eclairs..

anyway, for anyone thats interested.. here's the recipe (which i managed to copy down while reading at borders.. hahaha..)

Recipe for chocolate eclairs:

1 cup of plain flour (125g), sifted

1 stick of butter (125g, 4oz), unsalted

1 cup of water (250g, 8 oz)

4 large eggs, lightly beaten

whipped cream

100g dark chocolate, chopped and melted

Steps:

Add the butter and water in a heatproof bowl and heat over medium heat.

Melt the butter by constant stirring.

Switch to strong fire and boil mixture.

After butter is totally melted, add the flour to the mixture at one goal and beat with a wooden spoon till well-mixed. Mixture will be heavy and lumpy.

After mixture is well combined, transfer to a cool large bowl and let it cool for a moment. Add in the eggs (abt 3 tsp at a time) and beat well. Continue to add the eggs slowly and beat well after each addition till all eggs are added.

Prepare 2 baking trays and sprinkle some water on it. Pipe the batter (abt 1.5cm for bite size) and bake at 210C for 10-15mins, and afterwhich, lower temp to 180C and continue to bake for another 10-15mins.

Remove from oven and cool.

Split the eclairs into 2 by slicing in the middle, and add in the whipped cream.

For chocolate toppings:

Melt 100g of dark couverture chocolate (i'm lazy.. i use microwave instead of double boil method) till chocolate is smooth and consistent. Spread on top of eclairs, chill slightly or cool for chocolate to set.

Easy, isn't it? Heehee. Enjoy!

Baked blueberry & peach muffins as well as peach cupcakes with mascarpone cream cheese frosting few days back, and this is the first time I baked so many! total of 50++ cakes in total.. haha.

took a couple of photos, but lacking of time to upload them (okok.. i'm lazy. i admit..) but will do it soon! i'm itching to bake some chcolate eclairs.. so... stay tuned!

i've been wondering if my cakes will ever appear on that blog, and it really did! what a pleasant surprise =)

comments on my green tea cupcakes were that it's a little too sweet, and green tea taste could be stronger.. so, i'll cut on the sugar the nx time round, and throw in more more more green tea powder!

comments on the tiramisu cupcakes' were that the texture was 'weird', as it's purely made up of eggs trapped with lotsa air. the cake was porous, and kinda harden overnight.. so.. i'll forget about that recipe, and stick to REAL tiramisu if i feel like eating one. hehe.

i'm sooo tired now, but satisfied cos i finally got to bake what I've been thinking of for weeks!

it contains NO BUTTER NO OIL! how amazing rite? I was impressed by this recipe, but it's alittle too time-consuming and tiring.. i'll probably skip this in the future unless requested. haha. there's coffee taste, and frosted with baileys mascarpone cheese cream! yummy..

and this is my 1st attempt at green tea cupcake with green tea frosting.. pretty, aint they?

i like this green tea cupcakes. the cakes are moist yet firm, and has a tinted taste of green tea.. the frosting is firm, yet not too sweet. just nice for my preference =)

I bought a punnet of blueberries, as well as a box of nectarines (peaches) from NTUC during lunch today. It got me excited for the whole afternoon, hoping that I can knock off on time so that i can rush to bake something out, hopefully for breakfast tml!

Surfed around for recipes, and finally found this that I like! Improvised a little by adding in additional strawberries (my fav! Yummy) to the batter, and all i can say is.. it's so yummy that you wanna eat the batter!

I made a total of 15 cupcakes, but before i could get them frosted, 4 were gone.. eaten by my family haha. Daddy says its nice, and soft.

And i couldnt help but keep licking on the frosting, and feeding my boy spoons after spoons. FYI, mascarpone cheese are really ex. $10.80 for a tub of 500ml. Mascarpone cheese are used to make tiramisu cakes (and if u remember my previous post, I promised to make a tiramisu for my bf! But the cheese ended up on my cuppies instead :X ). They are exceptionally fragrant and soft, and taste really light and sweet.

After frosting and all, i'm left with ONLY 8 cupcakes. Half gone within an hr. I intended to keep 4 for myself, and 4 for my bf but who knows.. my evil sister actually gave 4 of my cuppies away to her tuition kid!!! arggggggggh. there goes my breakfast :(

Nvm, i'll make them again.. since there's still peaches and strawberries in the fridge!

my first attempt at baking a "big" cake, topped with my favourite strawberries and chocolate cream! =)

i'm really pleased with the final outcome. A tall and sweet strawberry cake, heehee.

Pretty not??? :P I love the cross-section, revealing the strawberries with cream.

And of course, how i can miss out my cuppies ..!

"pizza-hut"

my boy and i wanted to try baking pizzas, since there is such a function on my new oven. so we planned for nice and romantic lunch, pizzas + pasta + wine + spending time together.. but, it turned out that my whole family was at home! (my sisters + bro in laws + nieces + nephews + my parents) but nonetheless, it's great to have more guinea pigs to try out my pizza, haha!

after baking cakes for some time, a switch to baking pizzas got me excited. we shopped round cold storage and bought all the ingredients that we like.

here's my pizza in the making.. (btw, i made those crust too!!! they were far too sticky initially and we improvised the dough again and again till we got it rite! haha.)

These pizzas taste good, really good! Had them with some pasta, and with my self-made strawberry & peach smoothie. *rub stomach* what a fulfilling lunch :P

as the title suggest, i've been working quite hard to get my fine tuned purrrfect vanilla cupcake.

finally, i found a recipe that i'm really quite pleased with. it yields soft yet moist cakes, and the texture remains even the next day!

and after 2 failed attempts with whipped cream, a tinge of phobia with whipped cream is growing in me.. however, with the help of a podder from LesDames, I managed to apply correct techniques to the cream and making it fluffy, and firm!

Yesterday, i met up with a Uni fren for dinner.. since she came down all the way from Bukit Batok with her bf, just to have dinner with me (*touched* haha...), i decided to bake something for her to try! And here it is.. pretty colourful ar? :P

Haven been baking for the past few days!

so... here I am! hehe.

so far, i've got a good chocolate cupcake and orange blueberry cupcake recipe.

time to work on my vanilla cuppies! i found that vanilla cuppies tend to be more temperamental, and thus, i shortlisted 2 different recipes and tried them out.

daddy was my first taster, and he likes it! (btw daddy has a sharp tongue).

i topped it with thick whipped cream, and it turned out to be pretty! tee hee.

I tried quite a few new recipes today.. and since there is some leftover durians sitting in my fridge, i tot, what the! Might as well utilise them!

so... here it is..

while my puffs are in the oven! (I've decided to name the puffs that buttercup baked as power-puffs! haha!)

i also baked chocolate cupcakes (again!) cos' i had some remaining batter left from the previous bake. also, i tried out strawberry yoghurt muffins.. and.. blur me, forgot to take pictures of my muffins after they are baked.. i only haf them before entering the oven!

this is a chocolate banana cake i've baked the other day.. all my backlogs. heh. it's frosted with chocolate on top, and with banana fillings with chocolate cream in between the cake layers. my first attempt at bigger cakes! (the cut out portions are eaten by my boy.. my guinea pig hehehe)

and this is yummy chocolate lava cake. as the name suggest, lava cake, means that the chocolate will flow out like lava after you bite into it! look like the chocolate oozing out (i know it's a lousy pic.. pardon me.) my boy loves this, and keeps pestering me for more!

A fren of mine ordered a dozen chocolate cupcakes from me.. and i made 2 dozens plus a 9" cake, which I intend to frost it tomorrow to turn it into a chocolate banana cake. hehe.

Blueberry orange muffins & Chocolate Lava cake

knocked off on time today.. been working OT for past 2 days, decided to have a break.

Saw a recipe for lava cake yesterday, and have been thinking of baking it all nite long! sooo.. here i come! haha.

a very simple recipe, which yields delicious lava cake. the key is, do not overbake it otherwise the lava will not flow! (which sadly, happened to my cakes).

nonetheless, my boy says that it taste good, especially when warm + ice cream! hehe.

made 2 dozens of blueberry orange muffins.. i love this recipe. it's really good.. *yummy*

new oven!

my long awaited oven is finally here! hehe.
lots of cleaning up jobs to do over the weekend.. my oven was here on saturday, so was mummy's new hod (stoves).
daddy's new LCD 42" TV came on sunday, and had lotsa cleaning up to do in order to shelve all these new products..
its just a joy to see my new oven, and even a greater joy to see the end-products of the oven! hehe.
thanks mummy n daddy for blessing me with the oven. I promise to bake better stuffs for all to eat. hahaha.

anyway, the first generation of orange cupcakes from the oven turned out nice, but the surface was pretty charred. so.. forget it, no pictures taken.

here's the 2nd batch of my bakes from my new oven. i love this recipe :) nice texture of the chocolate cupcake with a great companion of chocolate frosting. not too sweet, not too chocolatey (i'm never a chocolate lover) and taste just nice!

Had a potluck last saturday with my buddies!
Ate and ate.. the whole table was filled with food. and i had a hard time clearing up.. but thank God, I haf Danny Low! The wonder housemaker.. who happened to be my bf. hahaha.

We made a 7" vanilla-banana cake frosted with chocolate toppings, and added some colourful chocolates to it. However, forgot to take a pic of the cake before it ended up in our stomaches.

Here's the remaining cupcakes I've made.
Lots of improvements required.

Blueberry muffins

So excited to bake my blueberry muffins last nite. Took me a whopping 3 hrs to get everything done...

Recipe indicated it'll yield 12 muffins, but i got 24 muffins instead! I supposed it's because i'm using a cupcake tray instead of a standard muffin tray..

I love the crumbs on the top of these muffins.. crispy n crunchy. Plus, it's so exciting to see all the blueberries BURST upon heated in the oven.. sizzling sounds are so appealing!

the muffins taste really good when they're freshly baked out of the oven. However, i had one for breakfast this morning again, it has kinda harden and feels much tougher den last nite.

Perhaps I should reduce the amt of flour and increase the milk content!

Nonetheless.. these are my beautiful muffins..my proud creations!
